Simple French-Style Potato Salad

Instructions
- Rinse and scrub the potatoes, then slice them into ¼-inch slices.
- Add the sliced potatoes to a large saucepan, cover with water, and add a dash of salt.
- Bring the water to a boil, then reduce heat and cook for 10-15 minutes until the potatoes are tender.
- Drain the potatoes and rinse with cool water, then add them to a large serving bowl.
- Season the potatoes with salt, black pepper, and apple cider vinegar, and set aside.
- In a mixing bowl, whisk together the mustard, garlic, salt, pepper, red wine vinegar, and apple cider vinegar.
- While whisking, slowly stream in the olive oil to emulsify the dressing.
- Add the dill to the dressing and whisk again, adjusting the flavor as needed.
- Pour the dressing over the potatoes, add the green onion and parsley, and toss to combine.
- Taste and adjust seasoning if necessary, then serve warm, chilled, or at room temperature.
