Ingredients

The potatoes and vegetables

  • 2 pounds baby yellow potatoes
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 Tbsp apple cider vinegar
  • 1 cup diced green onion
  • ¼ cup fresh chopped parsley (optional)

The dressing

  • Tbsp spicy brown mustard (or dijon mustard)
  • 3 cloves garlic, minced
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 3 Tbsp red wine vinegar (or white wine vinegar)
  • 1 Tbsp apple cider vinegar
  • 3 Tbsp good olive oil
  • ¼ cup fresh chopped dill

Instructions

  1. Rinse and scrub the potatoes, then slice them into ¼-inch slices.
  2. Add the sliced potatoes to a large saucepan, cover with water, and add a dash of salt.
  3. Bring the water to a boil, then reduce heat and cook for 10-15 minutes until the potatoes are tender.
  4. Drain the potatoes and rinse with cool water, then add them to a large serving bowl.
  5. Season the potatoes with salt, black pepper, and apple cider vinegar, and set aside.
  6. In a mixing bowl, whisk together the mustard, garlic, salt, pepper, red wine vinegar, and apple cider vinegar.
  7. While whisking, slowly stream in the olive oil to emulsify the dressing.
  8. Add the dill to the dressing and whisk again, adjusting the flavor as needed.
  9. Pour the dressing over the potatoes, add the green onion and parsley, and toss to combine.
  10. Taste and adjust seasoning if necessary, then serve warm, chilled, or at room temperature.
