Ingredients

  • 1.5 lbs baby potatoes
  • 3 tbsp olive oil
  • 1 juice of lemon
  • 2 tbsp garlic powder
  • 2 tbsp oregano spice
  • 1 tbsp Umami Spice
  • 1 tsp red pepper flakes
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup green onions, finely chopped
  • ½ cup feta cheese, crumbled or cubed
  • 1 tsp rosemary spice, chopped

Instructions

  1. 1. Boil water in a large pot and cook halved potatoes until fork-tender.
  2. 2. Prepare the dressing by whisking together oil, lemon juice, herbs (except rosemary), and spices.
  3. 3. Strain the cooked potatoes and add them to a mixing bowl while hot.
  4. 4. Toss the potatoes with the dressing, green onions, feta, and rosemary.
  5. 5. Serve immediately or let sit to enhance flavors.
