Greek Potato Salad

Instructions
- Boil diced potatoes in salted water until tender.
- Drain and chill the potatoes completely.
- Prepare the dressing by removing excess liquid from diced cucumber.
- Mix cucumber with Greek yogurt, mayonnaise, parsley, dill, lemon juice, garlic, salt, and pepper.
- Add cooled potatoes and red onion to the dressing and toss to coat.
- Garnish with additional parsley, dill, and lemon zest if desired before serving.
