Greek Potato Salad

Ingredients

  • 2 ½ lbs red potatoes
  • cup chopped red onion
  • ½ English cucumber
  • 1 cup fat free plain Greek yogurt
  • ¼ cup mayonnaise
  • 3 Tbsp finely chopped fresh parsley
  • 1 Tbsp minced fresh dill
  • 1 ½ Tbsp fresh lemon juice
  • 1 clove garlic
  • ½ tsp lemon zest
  • to taste salt and pepper

Instructions

  1. Boil diced potatoes in salted water until tender.
  2. Drain and chill the potatoes completely.
  3. Prepare the dressing by removing excess liquid from diced cucumber.
  4. Mix cucumber with Greek yogurt, mayonnaise, parsley, dill, lemon juice, garlic, salt, and pepper.
  5. Add cooled potatoes and red onion to the dressing and toss to coat.
  6. Garnish with additional parsley, dill, and lemon zest if desired before serving.
