Red Potato Salad

red potatoes, cut into ½ inch chunks

plain Greek yogurt

Instructions
- Boil the potatoes in a large pot of water until fork tender.
- Strain the potatoes and rinse them with cold water, then let them cool.
- In a separate bowl, mix Greek yogurt, mayo, lemon juice, pickle juice, minced pickles, dill, green onions, dijon mustard, salt, and pepper until combined.
- Add the cooled potatoes to the sauce and mix until covered, smashing some potato pieces for texture.
- Serve immediately or refrigerate for 30 minutes to 1 hour before serving cold.
