Instructions
- 1. Boil salted water and add the potatoes, cooking until tender but firm, about 8-10 minutes.
- 2. Drain the potatoes and let them cool.
- 3. Chop the boiled eggs and add them to a bowl with the potatoes, red onions, and celery.
- 4. In a separate bowl, mix mayonnaise, relish, mustard, lemon juice, and Creole seasoning.
- 5. Combine the dressing with the potato mixture and adjust seasoning as needed.
- 6. Refrigerate until ready to serve.
