Southern Potato Salad

Ingredients

The salad

  • 4 large russet potatoes
  • 4 hard-boiled eggs
  • ¼ cup green onions, diced
  • ½ cup celery, chopped
  • ¼ cup sweet relish
  • 1 tablespoon garlic, minced

The dressing

  • 2 tablespoons Dijon mustard
  • ½ cup mayonnaise
  • 1 teaspoon Creole seasoning
  • to taste salt and pepper

Instructions

  1. Peel and cut the potatoes into chunks, then place them in a medium saucepan covered with water.
  2. Salt the water and cook the potatoes until tender, about 10 minutes. Drain and let cool.
  3. Once cool, add the potatoes to a large bowl with chopped eggs, green onion, and celery.
  4. In a medium bowl, mix the sweet relish, garlic, mustard, mayonnaise, Creole seasoning, salt, and pepper.
  5. Combine the dressing with the potato mixture and mix gently but thoroughly. Season with additional salt and pepper if needed.
  6. Cover with plastic wrap and refrigerate until ready to serve.
