Ingredients

The salad

  • 2-3 small Cooked Beets
  • 1 unit Orange
  • ¼ small Red Onion
  • 3 tablespoon Goat Cheese
  • ¼ cup Roasted Pistachios
  • 1 bunch Baby Arugula

The vinaigrette

  • 1 teaspoon Orange Zest
  • ¼ cup Orange Juice
  • 2 teaspoons Honey
  • 2 tablespoons Red Wine Vinegar
  • ¼ cup Olive Oil
  • 1 pinch Kosher Salt
  • 1 pinch Pepper

Instructions

  1. If using arugula, spread it out on a plate or in a salad bowl.
  2. Layer the beets, orange segments, and red onion on top of the greens, or just layer them without greens.
  3. Crumble the goat cheese on top.
  4. Dress the salad with vinaigrette to taste.
  5. Sprinkle the pistachios on top.
  6. To make the vinaigrette, combine all ingredients in a jar and shake until well mixed, or whisk in a bowl.
