Citrus Roasted Beet and Goat Cheese Salad

Ingredients

The salad

  • 1 large bunch baby arugula
  • 1 cup almonds
  • 12 oz goat cheese
  • 4–5 medium sized beets
  • 2 tbsp coconut oil or olive oil
  • 2 pieces oranges
  • to taste sea salt
  • to taste pepper

For garnish

  • to taste orange zest

Instructions

  1. Preheat the oven to 350°F.
  2. Slice the beets into 1/4 inch slices and toss with oil.
  3. Cover the pan with aluminum foil and spread the beets out.
  4. Sprinkle with sea salt and pepper, then roast for 35 minutes.
  5. Once done, toss the beets in the juice of half an orange.
  6. Divide arugula among four bowls and add beets, goat cheese, and almonds.
  7. Squeeze orange juice over the salad and drizzle with olive oil.
  8. Finish with additional salt and pepper.
