Citrus Roasted Beet and Goat Cheese Salad

For garnish
Instructions
- Preheat the oven to 350°F.
- Slice the beets into 1/4 inch slices and toss with oil.
- Cover the pan with aluminum foil and spread the beets out.
- Sprinkle with sea salt and pepper, then roast for 35 minutes.
- Once done, toss the beets in the juice of half an orange.
- Divide arugula among four bowls and add beets, goat cheese, and almonds.
- Squeeze orange juice over the salad and drizzle with olive oil.
- Finish with additional salt and pepper.
