Layered Roasted Beet & Orange Salad

red beets (roasted, peeled, and trimmed)

goat cheese log (stored in the freezer)

Instructions
- Roast the beets loosely in foil for 45 to 75 minutes at 400 degrees.
- Peel and trim the roasted beets and set aside.
- Place the goat cheese in the freezer for 30 to 40 minutes before preparing the salad.
- Cut the oranges and beets into about 12 thin slices and place them on separate plates.
- Thinly slice the almost frozen goat cheese log into 12 pieces.
- Layer the slices on a platter in the order of orange, beet, goat cheese, and spinach leaves, repeating until all ingredients are used.
- Sprinkle chives on top, drizzle with olive oil, season with salt, and serve.
