Ingredients

The beets

  • 2 pieces red beets

The dressing

  • 4 tablespoons olive oil
  • 3 tablespoons orange juice
  • 1 tablespoon honey
  • ¼ teaspoon salt

The goat cheese

  • 8 ounces goat cheese log
  • cup whole-wheat flour
  • 1 piece egg (beaten)
  • cup whole-wheat breadcrumbs
  • to taste olive oil (for cooking)
  • to taste salt and pepper

The salad and assembly

  • 5 ounces mixed greens
  • ½ cup chopped pecans

Instructions

  1. Preheat the oven to 400°F and wrap the beets in foil, then bake until tender.
  2. Once cool, peel the beets and cut them into small dice.
  3. In a jar, combine olive oil, orange juice, honey, and salt to make the dressing and shake well.
  4. Slice the goat cheese into 12 even pieces and coat them in flour, then egg, and finally breadcrumbs.
  5. Heat olive oil in a skillet and cook the breaded goat cheese until golden brown on both sides.
  6. On a platter, arrange the mixed greens, beets, and pecans, then drizzle with dressing.
  7. Top the salad with the warm goat cheese and serve.
