Instructions
- Preheat the oven to 400°F and wrap the beets in foil, then bake until tender.
- Once cool, peel the beets and cut them into small dice.
- In a jar, combine olive oil, orange juice, honey, and salt to make the dressing and shake well.
- Slice the goat cheese into 12 even pieces and coat them in flour, then egg, and finally breadcrumbs.
- Heat olive oil in a skillet and cook the breaded goat cheese until golden brown on both sides.
- On a platter, arrange the mixed greens, beets, and pecans, then drizzle with dressing.
- Top the salad with the warm goat cheese and serve.
