Instructions
- Heat olive oil in a large pot over medium-high heat, then add onions, carrots, celery, and garlic; cook until translucent.
- Add broth, crushed tomatoes, Italian seasoning, basil, salt, pepper, and sugar; adjust spices as needed.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes until vegetables are softened.
- Stir in heavy whipping cream and blend the soup until smooth.
- For the grilled cheese, heat a skillet and butter one side of each slice of bread.
- Place grated cheese on the unbuttered side of one slice and assemble the sandwich.
- Cook the sandwich in the skillet for 3-4 minutes on each side until golden brown and cheese is melted.
