Ingredients

The soup

  • 1 teaspoon olive oil
  • ½ cup diced onions
  • ½ cup diced celery
  • ½ cup diced carrots
  • 3 cloves garlic
  • 4 cups broth
  • 28 oz canned crushed tomatoes
  • 1½-2 teaspoons Italian seasoning
  • ½ teaspoon dried basil
  • 1-2 tablespoons sugar or sweetener
  • 1 cup heavy whipping cream

The grilled cheese

  • 4 slices bread
  • 2 tablespoons unsalted butter
  • 1 cup grated cheese

Instructions

  1. Heat olive oil in a large pot over medium-high heat, then add onions, carrots, celery, and garlic; cook until translucent.
  2. Add broth, crushed tomatoes, Italian seasoning, basil, salt, pepper, and sugar; adjust spices as needed.
  3. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until vegetables are softened.
  4. Stir in heavy whipping cream and blend the soup until smooth.
  5. For the grilled cheese, heat a skillet and butter one side of each slice of bread.
  6. Place grated cheese on the unbuttered side of one slice and assemble the sandwich.
  7. Cook the sandwich in the skillet for 3-4 minutes on each side until golden brown and cheese is melted.
