Ingredients

The soup

  • 1 cup cashews
  • 2 cups baby carrots
  • 1 can crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon pepper

The grilled cheese

  • 4 slices bread
  • 2 tablespoons butter
  • 4 slices cheese

Instructions

  1. Soak cashews in water for at least 2 hours, then drain.
  2. In a pot, combine baby carrots, crushed tomatoes, vegetable broth, salt, and pepper. Bring to a boil and simmer until carrots are tender.
  3. Blend the soup until smooth, adding soaked cashews for creaminess.
  4. In a skillet, melt butter over medium heat.
  5. Assemble the sandwiches with cheese between two slices of bread, then grill in the skillet until golden brown on both sides.
  6. Serve the grilled cheese with the tomato soup.
