Instructions
- Step 1: Place a loaf pan in the freezer.
- Step 2: In a blender, combine the chilled coconut milk, frozen strawberries, and maple syrup, then blend until thick and creamy.
- Step 3: If using xanthan gum, add it halfway through blending.
- Step 4: Pour the mixture into the loaf pan and cover with plastic wrap. Stir every 20-30 minutes for the first hour to prevent iciness.
- Step 5: Before serving, let the ice cream thaw for 10-15 minutes.
