Homemade Chicken Piccata

Instructions
- Prepare the lemon, parsley, and garlic by chopping the parsley, juicing the lemon, and mincing the garlic.
- Trim excess fat from the chicken breasts and pound them to an even thickness, then cut them into pieces.
- Season the chicken pieces with salt and pepper, then coat them lightly in flour.
- Heat olive oil in a skillet over medium heat and cook the chicken until golden brown on both sides.
- Remove the chicken and reduce the heat, adding butter and garlic to sauté.
- Deglaze the pan with chicken broth and lemon juice, whisking to dissolve browned bits.
- Add capers and half the parsley to the sauce, then return the chicken to the skillet and simmer.
- Garnish with remaining parsley before serving.
