Ingredients

The chicken

  • 2-3 lbs boneless, skinless chicken breasts
  • Pinch salt
  • Pinch pepper

The sauce

  • 1 fresh lemon
  • ¼ bunch Italian parsley
  • 3 cloves garlic
  • ½ cup flour
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • ½ cup chicken broth
  • 1 Tbsp capers

Instructions

  1. Prepare the lemon, parsley, and garlic by chopping the parsley, juicing the lemon, and mincing the garlic.
  2. Trim excess fat from the chicken breasts and pound them to an even thickness, then cut them into pieces.
  3. Season the chicken pieces with salt and pepper, then coat them lightly in flour.
  4. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown on both sides.
  5. Remove the chicken and reduce the heat, adding butter and garlic to sauté.
  6. Deglaze the pan with chicken broth and lemon juice, whisking to dissolve browned bits.
  7. Add capers and half the parsley to the sauce, then return the chicken to the skillet and simmer.
  8. Garnish with remaining parsley before serving.
