Jamaican Chickpea Stew

Ingredients

The stew

  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 ½ tsp curry powder
  • 1 tsp dried thyme
  • ½ tsp ground allspice
  • ½ tsp crushed red pepper flakes
  • to taste salt
  • ¼ cup dry red wine
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can chickpeas, drained and rinsed
  • 1 14.5 oz can diced tomatoes, undrained

For serving

  • 3 cups cooked brown rice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sauté onion and garlic until the onion is translucent, about 5 minutes.
  3. Add curry powder, thyme, allspice, red pepper flakes, and salt; cook until fragrant, about 30 seconds.
  4. Stir in red wine, black beans, chickpeas, and tomatoes.
  5. Bring to a full boil, then reduce heat to medium-low and simmer uncovered for 15 minutes.
  6. Taste and add additional salt if desired.
  7. Serve over brown rice.
