Instructions
- Heat the olive oil in a deep skillet or small soup pot over medium heat.
- Add the diced onions and cook until translucent and soft, about 5-6 minutes.
- Stir in the spice blend and cook until fragrant, about 1 minute.
- Add the tomato paste, mashing it into the spices and oil.
- Stir in the garlic and chickpeas, cooking for 30 seconds.
- Add the balsamic vinegar and diced tomatoes, scraping up any brown bits from the pan.
- Pour in the coconut milk and season with salt and pepper.
- Bring the stew to a boil, then reduce heat to a simmer for 10-15 minutes.
- Garnish with chopped parsley or cilantro and serve hot.
