Chicken Saltimbocca

Ingredients

The chicken

  • 4 pieces boneless skinless chicken breasts, thin cut
  • to taste salt and pepper
  • 12 leaves fresh sage
  • 4 slices prosciutto
  • 2 tablespoons olive oil

The sauce

  • 3 tablespoons butter
  • 1 tablespoon all purpose flour
  • cup white wine
  • ¾ cup chicken broth
  • 1 tablespoon lemon juice
  • to taste salt and pepper
  • optional fresh sage leaves and lemon wedges for garnish

Instructions

  1. Pound each chicken breast between plastic wrap to create thin cutlets.
  2. Season the chicken with salt and pepper, then place 3 sage leaves on top of each piece.
  3. Wrap each chicken breast with a slice of prosciutto.
  4. Heat olive oil in a pan over medium-high heat and cook the chicken for 4-5 minutes per side until golden brown.
  5. Remove the chicken from the pan and cover to keep warm.
  6. Melt butter in the same pan over medium heat, then add flour and cook for one minute while stirring.
  7. Pour in the white wine and simmer for 2 minutes, then add chicken broth and simmer until the sauce thickens.
  8. Stir in lemon juice and season with salt and pepper.
  9. Return the chicken to the pan and spoon the sauce over it. Garnish with sage and lemon if desired, then serve immediately.
