Chicken Saltimbocca

The sauce

fresh sage leaves and lemon wedges for garnish
Instructions
- Pound each chicken breast between plastic wrap to create thin cutlets.
- Season the chicken with salt and pepper, then place 3 sage leaves on top of each piece.
- Wrap each chicken breast with a slice of prosciutto.
- Heat olive oil in a pan over medium-high heat and cook the chicken for 4-5 minutes per side until golden brown.
- Remove the chicken from the pan and cover to keep warm.
- Melt butter in the same pan over medium heat, then add flour and cook for one minute while stirring.
- Pour in the white wine and simmer for 2 minutes, then add chicken broth and simmer until the sauce thickens.
- Stir in lemon juice and season with salt and pepper.
- Return the chicken to the pan and spoon the sauce over it. Garnish with sage and lemon if desired, then serve immediately.
