Chicken Saltimbocca

Instructions
- Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
- In a shallow bowl, lightly beat the egg whites and place the bread crumbs on a separate plate.
- Press four sage leaves into the top of each chicken breast and lay prosciutto over the sage.
- Dip each chicken stack into the egg whites, coating both sides, then coat in bread crumbs.
- Place the coated chicken on the baking sheet and press any remaining bread crumbs on top.
- Bake for about 12 minutes or until the chicken is cooked through.
- Garnish with lemon wedges to squeeze over the top before serving.
