Chicken Saltimbocca

Ingredients

The chicken

  • 4 oz boneless skinless chicken breast cutlets
  • 2 oz prosciutto, thinly sliced

The coating

  • 2 egg whites egg whites
  • ½ cup seasoned bread crumbs

The flavorings

  • 16 leaves fresh sage
  • 1 lemon lemon, quartered

Instructions

  1. Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
  2. In a shallow bowl, lightly beat the egg whites and place the bread crumbs on a separate plate.
  3. Press four sage leaves into the top of each chicken breast and lay prosciutto over the sage.
  4. Dip each chicken stack into the egg whites, coating both sides, then coat in bread crumbs.
  5. Place the coated chicken on the baking sheet and press any remaining bread crumbs on top.
  6. Bake for about 12 minutes or until the chicken is cooked through.
  7. Garnish with lemon wedges to squeeze over the top before serving.
