Pasta with Creamy Pumpkin Sauce

Ingredients

The sauce

  • 2 cloves garlic
  • 1 Tbsp butter
  • 1 cup pumpkin purée
  • 1 cup chicken broth
  • tsp nutmeg
  • ¼ tsp chili powder
  • a pinch cayenne pepper
  • to taste freshly cracked black pepper
  • 2 Tbsp half & half or cream

The pasta

  • 8 oz pasta

Instructions

  1. 1. Boil a large pot of water for the pasta.
  2. 2. Once boiling, add the pasta and cook until al dente, then drain.
  3. 3. While the pasta cooks, mince the garlic and sauté it in butter over medium-low heat until fragrant.
  4. 4. Add the pumpkin purée and chicken broth to the skillet and mix well.
  5. 5. Stir in the nutmeg, chili powder, cayenne pepper, and black pepper, then let the sauce simmer for about 10 minutes.
  6. 6. Once the pasta is done, stir in the half & half or cream into the sauce and season with salt if needed.
  7. 7. Combine the drained pasta with the sauce and serve.
