Pasta with Creamy Pumpkin Sauce

Ingredients

The sauce

  • 2 cloves garlic
  • 1 Tbsp butter
  • 1 cup pumpkin purée
  • 1 cup chicken broth
  • tsp nutmeg
  • ¼ tsp chili powder
  • 1 pinch cayenne pepper
  • to taste freshly cracked black pepper
  • 2 Tbsp half & half or cream

The pasta

  • 8 oz pasta

Instructions

  1. Boil a large pot of water for the pasta.
  2. Once boiling, add the pasta and cook until al dente, then drain.
  3. While waiting for the water to boil, mince the garlic and sauté it in butter over medium-low heat until soft.
  4. Add the pumpkin purée and chicken broth to the skillet and stir to combine.
  5. Add nutmeg, chili powder, cayenne pepper, and black pepper to the sauce and let it simmer while the pasta cooks.
  6. Once the pasta is drained, stir in half & half or cream into the sauce.
  7. Add the drained pasta to the skillet and stir to coat with the sauce.
