Pumpkin Rice Noodles

Ingredients

The noodles

  • 100 g dried rice vermicelli

The filling

  • 100 g ground pork
  • 100 g pumpkin or kabocha, diced

The sauce

  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • ½ cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce
  • 3 dashes white pepper

Instructions

  1. Soak the dried rice vermicelli in warm water for about 20 minutes, then drain.
  2. Heat oil in a wok and stir-fry the minced garlic until aromatic.
  3. Add the ground pork and diced pumpkin to the wok and cook until the pork is browned.
  4. Pour in the water, soy sauce, sweet soy sauce, and white pepper, then bring to a boil.
  5. Add the soaked rice vermicelli to the wok and stir to combine with the other ingredients.
  6. Continue to stir-fry until the vermicelli is cooked through and has absorbed the sauce.
  7. Dish out and serve immediately.
