Peanut Rice Noodles with Pork

Ingredients

The noodles

  • 12 oz. regular-width rice stick noodles
  • ¼ cup smooth natural peanut butter
  • ¼ cup soy sauce
  • 2 Tbsp. unseasoned rice vinegar
  • 1 Tbsp. sugar
  • 2 tsp. crushed red pepper flakes
  • 1 Tbsp. vegetable oil

The protein and vegetables

  • 1 lb. ground pork
  • in. piece ginger, peeled, cut into matchsticks
  • 4 cloves garlic, thinly sliced
  • 1 bunch collard greens, ribs and stems removed, leaves thinly sliced

The seasoning

  • Kosher salt to taste

Instructions

  1. 1. Boil salted water in a large saucepan, then remove from heat and add the noodles. Let sit for about 4 minutes until al dente, then drain and rinse with cold water.
  2. 2. In a medium bowl, whisk together peanut butter, soy sauce, vinegar, sugar, red pepper flakes, and 1 cup of water until combined.
  3. 3. Heat oil in a large skillet over medium heat. Cook the pork until nearly cooked through, about 5 minutes, breaking it up with forks.
  4. 4. Add ginger and garlic to the skillet and cook until softened, about 3 minutes.
  5. 5. Stir in collard greens and cook until wilted, about 2 minutes.
  6. 6. Add the sauce and noodles to the skillet, bring to a simmer, and cook while tossing until the sauce reduces by half and coats the noodles, about 3 minutes. Season with salt to taste.
