Peanut Rice Noodles with Pork

Instructions
- 1. Boil salted water in a large saucepan, then remove from heat and add the noodles. Let sit for about 4 minutes until al dente, then drain and rinse with cold water.
- 2. In a medium bowl, whisk together peanut butter, soy sauce, vinegar, sugar, red pepper flakes, and 1 cup of water until combined.
- 3. Heat oil in a large skillet over medium heat. Cook the pork until nearly cooked through, about 5 minutes, breaking it up with forks.
- 4. Add ginger and garlic to the skillet and cook until softened, about 3 minutes.
- 5. Stir in collard greens and cook until wilted, about 2 minutes.
- 6. Add the sauce and noodles to the skillet, bring to a simmer, and cook while tossing until the sauce reduces by half and coats the noodles, about 3 minutes. Season with salt to taste.
