Ingredients

The main ingredients

  • 1 tbsp ghee
  • 12 oz pork tenderloin, cut into thin slices
  • 2 cups broccoli florets
  • ¼ cup roasted peanuts
  • 150 g Asian egg noodles

The sauce

  • cup unseasoned rice vinegar
  • ½ cup water
  • 3 tbsp coconut aminos
  • 3 tbsp creamy peanut butter
  • 3 tbsp raw honey
  • 3 tsp fish sauce
  • tsp ground ginger
  • 1 tsp red pepper flakes
  • 1 tsp tapioca starch
  • 1 clove garlic, minced

Instructions

  1. Make the sauce by mixing all the sauce ingredients together in a large glass measuring cup.
  2. Bring salted water to a boil in a medium saucepan.
  3. Place broccoli florets in a microwave-safe bowl or steam basket.
  4. Preheat a large frying pan over high heat and add the ghee.
  5. When the water boils, add the pork to the hot pan and throw the noodles in the boiling water.
  6. Microwave the broccoli for 2 minutes or steam it over the noodles.
  7. Once the pork is cooked (about 2 minutes), lower the heat, and add the broccoli and cooked noodles to the pan.
  8. Add the peanuts and sauce to the pan, stirring gently until combined.
  9. Continue cooking for about 30 seconds until the sauce thickens, then serve immediately.
