Ingredients

The sauce

  • 4 tablespoons low sodium soy sauce
  • ¼ cup rice vinegar
  • 3 tablespoons hoisin sauce
  • 3 tablespoons creamy peanut butter
  • 1 tablespoon freshly grated ginger
  • 3 cloves garlic

The stir fry

  • 1 pound pork tenderloin
  • 2 tablespoons canola or grapeseed oil
  • 8 ounces whole-grain pasta noodles or rice noodles
  • 32 ounces frozen stir fry vegetables
  • 1 cup shelled edamame
  • 1 cup sliced green onions
  • ½ cup dry roasted peanuts
  • ¼ cup chopped fresh cilantro
  • ½ teaspoon red pepper flakes

Instructions

  1. Prepare the sauce by whisking together soy sauce, rice vinegar, hoisin sauce, peanut butter, ginger, and garlic.
  2. In a skillet or wok, heat oil and cook the pork until browned and cooked through, then set aside.
  3. Cook the noodles according to package instructions and reserve some cooking liquid.
  4. In the same skillet, cook the frozen vegetables and edamame until hot, then combine with the pork.
  5. Add the sauce to the skillet, then toss in the cooked noodles, pork, vegetables, green onions, peanuts, cilantro, and red pepper flakes.
  6. Mix well and adjust the consistency with reserved pasta water if needed, then serve with additional peanuts and cilantro.
