Instructions
- Prepare the sauce by whisking together soy sauce, rice vinegar, hoisin sauce, peanut butter, ginger, and garlic.
- In a skillet or wok, heat oil and cook the pork until browned and cooked through, then set aside.
- Cook the noodles according to package instructions and reserve some cooking liquid.
- In the same skillet, cook the frozen vegetables and edamame until hot, then combine with the pork.
- Add the sauce to the skillet, then toss in the cooked noodles, pork, vegetables, green onions, peanuts, cilantro, and red pepper flakes.
- Mix well and adjust the consistency with reserved pasta water if needed, then serve with additional peanuts and cilantro.
