Ingredients

Velveting Mixture

  • 1 tablespoon rice cooking wine
  • 1 teaspoon soy sauce
  • 1 teaspoon corn starch
  • 12 ounces pork tenderloin

Sauce

  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 2 tablespoons rice cooking wine
  • 1 teaspoon sugar
  • cup beef stock
  • 2 teaspoons corn starch

Other Ingredients

  • ½ cup corn oil
  • 1 teaspoon fresh ginger
  • 2 cloves garlic
  • 2 tablespoons scallions
  • ¼ teaspoon red pepper flakes
  • 1 cup bok choy
  • 1 cup snow peas
  • ½ cup carrots
  • ½ cup red bell peppers
  • ½ cup broccoli florets
  • 2 tablespoons scallions
  • 12 ounces Ho Fun Noodles

Instructions

  1. Prepare the velveting mixture by combining rice cooking wine, soy sauce, and corn starch in a bowl.
  2. Add the pork to the mixture and marinate for 20 minutes.
  3. In another bowl, mix the sauce ingredients together.
  4. Heat corn oil in a wok or large sauté pan over high heat until shimmering.
  5. Add the pork to the pan and fry for 1-2 minutes until almost done and browned.
  6. Remove the pork and let it drain on a wire grate.
  7. Pour out the oil, reserving 2 tablespoons, and rinse the pan.
  8. Cook the Ho Fun noodles according to package instructions.
  9. Return the sauté pan to heat and add the reserved oil, ginger, garlic, and white scallions, sautéing until fragrant.
  10. Add the pork and vegetables to the pan and sauté for 1-2 minutes.
  11. Pour in the sauce mixture and cook until it thickens.
  12. Serve the stir-fry over the cooked Ho Fun noodles and garnish with green scallions.
