Instructions
- Prepare the velveting mixture by combining rice cooking wine, soy sauce, and corn starch in a bowl.
- Add the pork to the mixture and marinate for 20 minutes.
- In another bowl, mix the sauce ingredients together.
- Heat corn oil in a wok or large sauté pan over high heat until shimmering.
- Add the pork to the pan and fry for 1-2 minutes until almost done and browned.
- Remove the pork and let it drain on a wire grate.
- Pour out the oil, reserving 2 tablespoons, and rinse the pan.
- Cook the Ho Fun noodles according to package instructions.
- Return the sauté pan to heat and add the reserved oil, ginger, garlic, and white scallions, sautéing until fragrant.
- Add the pork and vegetables to the pan and sauté for 1-2 minutes.
- Pour in the sauce mixture and cook until it thickens.
- Serve the stir-fry over the cooked Ho Fun noodles and garnish with green scallions.
