Ingredients

Stir Fry Sauce

  • 2 cloves garlic, minced
  • cup pineapple juice
  • ¼ cup soy sauce
  • 1 inch ginger, piece
  • 3 tablespoons brown sugar
  • 1 teaspoon sriracha
  • 1 tablespoon cornstarch

Pork Stir Fry

  • 2 tablespoons avocado oil
  • 2 cups fresh broccoli, chopped
  • 1 medium red bell pepper, sliced
  • 1 small onion, sliced
  • 2 pounds boneless pork loin chops, sliced into thin strips

Instructions

  1. Mix all ingredients for the stir fry sauce in a medium bowl and set aside.
  2. Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat.
  3. Add broccoli, bell pepper, and onion to the skillet and sauté for 3-4 minutes until softened, then transfer to a small bowl.
  4. Add the remaining tablespoon of avocado oil to the skillet and heat through.
  5. Add the pork strips to the skillet, cooking approximately 1 minute per side until browned.
  6. Pour the stir fry sauce into the skillet with the browned pork and return the veggies to the skillet.
  7. Stir to combine everything and simmer for about 5 minutes until the sauce has thickened.
  8. Remove from heat and serve over rice, with noodles, or on its own.
