  • 1 teaspoon minced garlic
  • 12 ounces broccoli florets
  • 1 red bell pepper, cut into strips
  • 1 bunch green onions (scallions), cut into 2 inch pieces

The sauce

  • 2 tablespoons Tamari soy sauce (or coconut aminos)
  • 1 tablespoon extra dry sherry
  • 1 ½ tablespoons low carb sugar (or sugar or coconut sugar)
  • 1 teaspoon cornstarch (or arrowroot)
  • 1 teaspoon sesame oil

Optional ingredients

  • to taste red pepper flakes
  • to taste sesame seeds

Instructions

  1. Prepare the garlic and ginger by mincing them.
  2. Cut the pork loin into thin strips and mix with 1 tablespoon of oil, ginger, and garlic.
  3. Cut the red bell pepper and green onions, and layer them with broccoli in a bowl.
  4. Mix sweetener and cornstarch in a small bowl, then stir in soy sauce, sherry, and sesame oil.
  5. Heat the wok over high heat, add 1 tablespoon of oil, and coat the wok.
  6. Add the pork to the wok and cook until half done, then stir and remove from the pan.
  7. Add the vegetables to the wok, cover, and cook for 1 minute.
  8. Stir the vegetables, add the pork back, and pour the sauce over everything.
  9. Let the sauce boil and thicken, then serve.
