Easy Pork Stir Fry

The sauce

Tamari soy sauce (or coconut aminos)

extra dry sherry

low carb sugar (or sugar or coconut sugar)

cornstarch (or arrowroot)

sesame oil

Instructions
- Prepare the garlic and ginger by mincing them.
- Cut the pork loin into thin strips and mix with 1 tablespoon of oil, ginger, and garlic.
- Prepare the vegetables by cutting the red bell pepper into strips and the green onions into 2-inch pieces. Layer the broccoli florets on top.
- Mix the sweetener and cornstarch in a small bowl, then stir in the Tamari soy sauce, dry sherry, and sesame oil.
- Heat the wok over high heat and add 1 tablespoon of oil, coating the wok.
- Add the pork to the wok and let it cook undisturbed until half cooked, then stir until almost done and remove it from the pan.
- Add the bowl of vegetables to the wok, cover, and cook for 1 minute.
- Stir the vegetables, then add the pork back to the pan.
- Pour the stir fry sauce over the pork and vegetables, and let it boil at the bottom of the wok until the sauce thickens.
- Serve immediately.
