Ingredients

The stir fry

  • ¾ pound pork loin, cut into thin strips
  • 2 tablespoons avocado or olive oil (divided)
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon minced garlic
  • 12 ounces broccoli florets
  • 1 red bell pepper, cut into strips
  • 1 bunch green onions (scallions), cut into 2 inch pieces

The sauce

  • 2 tablespoons Tamari soy sauce (or coconut aminos)
  • 1 tablespoon extra dry sherry
  • 1 ½ tablespoons low carb sugar (or sugar or coconut sugar)
  • 1 teaspoon cornstarch (or arrowroot)
  • 1 teaspoon sesame oil

Optional ingredients

  • red pepper flakes
  • sesame seeds

Instructions

  1. Prepare the garlic and ginger by mincing them.
  2. Cut the pork loin into thin strips and mix with 1 tablespoon of oil, ginger, and garlic.
  3. Prepare the vegetables by cutting the red bell pepper into strips and the green onions into 2-inch pieces. Layer the broccoli florets on top.
  4. Mix the sweetener and cornstarch in a small bowl, then stir in the Tamari soy sauce, dry sherry, and sesame oil.
  5. Heat the wok over high heat and add 1 tablespoon of oil, coating the wok.
  6. Add the pork to the wok and let it cook undisturbed until half cooked, then stir until almost done and remove it from the pan.
  7. Add the bowl of vegetables to the wok, cover, and cook for 1 minute.
  8. Stir the vegetables, then add the pork back to the pan.
  9. Pour the stir fry sauce over the pork and vegetables, and let it boil at the bottom of the wok until the sauce thickens.
  10. Serve immediately.
