Teriyaki Pork Stir Fry

Ingredients

The stir fry

  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • ½ cup carrots, thinly sliced
  • ¾ cup bell peppers, cut into 1 inch pieces
  • 1 pound pork tenderloin, cut into 1 inch pieces or thinly sliced
  • 1 teaspoon ginger, minced
  • 2 teaspoons garlic, minced
  • 1 tablespoon sesame seeds
  • to taste salt and pepper

The sauce

  • ¼ cup soy sauce
  • ½ cup water
  • 3 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon cornstarch

Instructions

  1. Heat 1 teaspoon of oil in a large pan over medium-high heat and cook the broccoli, peppers, and carrots for 4-6 minutes until softened.
  2. Remove the vegetables from the pan and keep warm.
  3. Add the remaining oil to the pan, then add the pork and season with salt and pepper. Cook until browned, about 4-6 minutes.
  4. Add garlic and ginger to the pan and cook for 30 seconds.
  5. In a small pot, combine soy sauce, water, brown sugar, honey, and sesame oil over medium-high heat and stir until sugar dissolves.
  6. Increase heat to high and bring the sauce to a boil.
  7. Mix cornstarch with 2 tablespoons of cold water until dissolved, then add to the sauce and boil until thickened.
  8. Return the vegetables to the pan with the pork, pour in the sauce, and toss to coat. Sprinkle with sesame seeds before serving.
