Ingredients

The sauce

  • cup low sodium soy sauce
  • ½ cup water
  • 2 tablespoons water
  • 3 tablespoons brown sugar
  • 2 teaspoons honey
  • 1 teaspoon ground ginger
  • 1 tablespoon canola oil
  • 1 teaspoon minced garlic
  • 2 tablespoons cornstarch

The main dish

  • 1 ½ lbs boneless skinless chicken breasts
  • 3 cups raw bite-sized broccoli florets
  • 1 cup matchstick or shredded carrots

Instructions

  1. Combine the soy sauce, ½ cup water, brown sugar, honey, ginger, 1 teaspoon of oil, and garlic in a saucepan and bring to a boil.
  2. Once boiling, cook for one minute, then prepare a slurry with cornstarch and 2 tablespoons of water.
  3. Add the slurry to the boiling sauce and cook for another minute until thickened.
  4. In a skillet, heat 1 tablespoon of oil over medium-high heat, add chicken, and cook until done.
  5. Drain any excess liquid, then add the teriyaki sauce to the chicken and stir to coat.
  6. Spread broccoli and carrots over the chicken without mixing, cover, and steam for 2 minutes.
  7. Remove the cover, stir everything together, and serve warm.
