Ingredients

The stir fry

  • 1 lb. boneless skinless chicken breast
  • 4 cups broccoli florets
  • 1 large red pepper, diced
  • 2 large carrots, diced
  • tablespoons olive oil

The sauce

  • ½ cup homemade teriyaki sauce
  • ½ tablespoon cornstarch

Instructions

  1. Prepare the homemade teriyaki sauce.
  2. Thinly slice the chicken into bite-sized strips.
  3. Chop the broccoli, red pepper, and slice the carrots, then set aside.
  4. Heat olive oil in a large skillet over medium/high heat.
  5. Add the diced chicken to the skillet and sauté for 4-5 minutes.
  6. Add the chopped vegetables to the skillet and sauté for a few more minutes.
  7. Pour in the teriyaki sauce and continue cooking for another 5 minutes until the chicken is fully cooked and the veggies are tender.
  8. If desired, thicken the sauce by adding cornstarch and whisking until it thickens.
  9. Serve the teriyaki stir fry over your favorite grain.
