Teriyaki Beef Stir Fry

Ingredients

The stir fry

  • lbs thinly sliced steak (flank steak or sirloin)
  • 3 cups mixed vegetables (broccoli florets and sliced bell peppers)
  • to taste salt
  • to taste pepper
  • 1 tablespoon vegetable oil
  • optional sliced green onions
  • optional sesame seeds

The sauce

  • ¼ cup soy sauce
  • ½ cup water
  • ¼ cup brown sugar
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon + 1 teaspoon cornstarch

Instructions

  1. Prepare the sauce by combining soy sauce, water, brown sugar, garlic, ginger, honey, and sesame oil in a pot over medium-high heat until the sugar dissolves.
  2. Increase heat to high and bring the mixture to a boil.
  3. Mix cornstarch with cold water until dissolved, then add to the sauce and boil for 1-2 minutes until thickened. Set aside.
  4. Heat 1 teaspoon of vegetable oil in a large pan over medium-high heat and add the mixed vegetables, seasoning with salt and pepper. Cook until they start to brown and soften.
  5. Add 2 tablespoons of water to the vegetables and cook until the water evaporates. Remove the vegetables from the pan and set aside.
  6. Wipe the pan clean and heat the remaining vegetable oil over high heat.
  7. Cook half of the steak in the pan, seasoning with salt and pepper, for 2-3 minutes on each side until just cooked through. Set aside and repeat with the remaining steak.
  8. Return all the meat and vegetables to the pan, pour the sauce over, and cook for 2-3 minutes until warmed through.
  9. Garnish with sesame seeds and sliced green onions if desired.
