Teriyaki Beef Stir Fry

Ingredients

The stir fry

  • 1 pound sirloin steak cut into thin, bite-sized pieces
  • 1 tablespoon low-sodium soy sauce
  • ½ teaspoon ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • 1 medium red bell pepper, cored and cut into thin slices
  • 3 cups chopped mixed vegetables of choice (such as broccoli, snap peas, or carrots)
  • 1 can (8-ounce) sliced water chestnuts, drained
  • 3 medium green onions, finely chopped
  • 1 tablespoon sesame seeds (optional)
  • prepared for serving brown rice, white rice, quinoa, noodles, or cauliflower rice

The teriyaki sauce

  • cup low-sodium soy sauce
  • ¼ cup water
  • 3 tablespoons pure maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • ¼ teaspoon red pepper flakes (plus additional to taste)
  • 1 tablespoon cornstarch

Instructions

  1. Marinate the beef with soy sauce and black pepper, then set aside.
  2. Prepare the teriyaki sauce by mixing soy sauce, water, maple syrup, rice vinegar, garlic, ginger, red pepper flakes, and cornstarch.
  3. In a hot pan, cook the beef until browned and fully cooked, then set aside.
  4. Sauté the bell pepper and mixed vegetables until slightly softened.
  5. Add water chestnuts and return the beef to the pan, then pour in the teriyaki sauce and simmer to thicken.
  6. Stir in half of the green onions, then serve topped with sesame seeds and remaining green onions.
