Ingredients

Teriyaki Sauce

  • ½ cup coconut aminos
  • 2 dates pitted and soaked in warm water
  • 1 tbsp arrowroot starch
  • tsp apple cider vinegar
  • 1 tsp fresh ginger, grated
  • 1 tsp garlic powder

Main Ingredients

  • lbs flank or skirt steak, cut into 2-inch strips
  • 2 tbsp sesame oil
  • 2 small red bell peppers, cut into thin strips
  • 4 cups broccoli florets
  • 6 count green onions, cut into 3-4 inch pieces
  • 6 cups cauliflower rice
  • 2 tbsp avocado oil
  • to taste salt and pepper
  • to taste sesame seeds (optional)

Instructions

  1. Blend all teriyaki sauce ingredients until smooth.
  2. Prepare the steak, bell pepper, broccoli, and green onions; rice the cauliflower.
  3. Heat 1 tbsp of sesame oil in a skillet over medium-high heat, add beef, season, and cook until just done.
  4. Transfer beef to a plate and add remaining sesame oil, bell pepper, broccoli, and green onions to the pan; sauté until tender.
  5. In a separate pan, heat avocado oil and cook cauliflower rice until tender.
  6. Combine beef and sauce with the veggies, cooking until thickened.
  7. Serve teriyaki beef over cauliflower rice and top with sesame seeds if desired.
