Quick Beef Teriyaki

Ingredients

The sauce

  • cup store-bought thick teriyaki sauce or homemade teriyaki sauce
  • cup soy sauce
  • ¼ cup water
  • 2 tablespoons mirin or sherry or Marsala
  • 1 tablespoon rice wine vinegar or apple cider vinegar
  • ¼ cup granulated sugar
  • 3 tablespoons brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger
  • teaspoons cornstarch whisked with 1 tablespoon water

The beef

  • 2 pounds flap meat, sliced across the grain into 1x3-inch strips

To serve

  • as needed none rice
  • as needed none steamed broccoli or steamed green beans

Instructions

  1. Prepare the homemade teriyaki sauce by combining soy sauce, water, mirin, rice wine vinegar, granulated sugar, brown sugar, garlic powder, ground ginger, and cornstarch slurry in a pot and simmering until thickened.
  2. Adjust the oven rack to about 4 inches from the heating element and preheat the broiler.
  3. In a bowl, combine the sliced steak with about ⅓ cup of the prepared teriyaki sauce and toss to coat.
  4. Lay the meat in a single layer on a foil-lined broiler-safe baking sheet.
  5. Broil the meat for 2 minutes, then flip and broil for an additional 3 to 6 minutes until the desired doneness is reached.
  6. Brush the cooked meat with the remaining teriyaki sauce and serve over rice.
