Quick Thai-Style Pork Broccolini Stir Fry

Ingredients

  • 1 lb organic pork loin (stew or stir fry cut)
  • 1–2 tablespoon sesame oil
  • 2 cloves garlic (chopped)
  • 1–2 tablespoon gluten free tamari or gluten free soy sauce (divided)
  • ¼ cup coconut sugar
  • 2 tablespoon fish sauce (gluten free brand)
  • cup red onion or shallot
  • cup chopped or crushed nuts
  • ¼ tsp ground ginger
  • ¼ tsp red chili pepper flakes
  • a dash sea salt and pepper to taste
  • 2 bunches broccolini stalks (10–14 ounces)
  • 1 tablespoon lime juice
  • 1 sliced thai red pepper
  • 1 or 2 sliced shisoto pepper (optional)
  • thai basil leaves (to garnish)

Instructions

  1. Prepare the pork and vegetables by chopping and mincing as needed.
  2. Heat sesame oil in a fry pan over medium-high heat.
  3. Add the pork and garlic to the pan, cooking until the pork is browned.
  4. Remove the pork from the pan and set aside.
  5. In the same pan, add coconut sugar, spices, and tamari or soy sauce, cooking until bubbling and caramelized.
  6. Return the pork, onion, nuts, and broccolini to the pan and stir fry until the broccolini is tender and the pork is cooked through.
  7. Adjust sauce with additional tamari if needed, tossing the mixture while frying.
  8. Add sliced peppers and lime juice, stir frying for an additional 1-2 minutes.
  9. Serve in bowls, drizzling with reserved sauce and garnishing with thai basil.
