Ingredients

The noodles

  • 10 ounces brown rice noodles (ramen or lo mein)

The sauce

  • 2 tablespoons toasted sesame oil
  • 4 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon fresh lime juice
  • 2 teaspoons honey
  • ½ cup reserved noodle water

The protein and vegetables

  • 1 pound ground pork
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (peeled and minced)
  • ½ teaspoon red pepper flakes
  • 8 ounces coleslaw mix

For garnish

  • handful roasted peanuts (chopped)
  • handful green onions (chopped)

Instructions

  1. Cook the noodles according to package instructions and reserve ½ cup of noodle water.
  2. Heat sesame oil in a skillet over medium heat and cook the ground pork until browned and crispy.
  3. Add minced garlic, ginger, and red pepper flakes, cooking for another minute.
  4. Push the meat to the side and whisk in the reserved noodle water, soy sauce, peanut butter, lime juice, and honey until smooth.
  5. Bring the sauce to a brief boil, then reduce to a simmer.
  6. Stir in the noodles and coleslaw mix, mixing everything together.
  7. Garnish with chopped peanuts and green onions before serving.
