Instructions
- Cook the noodles according to package instructions and reserve ½ cup of noodle water.
- Heat sesame oil in a skillet over medium heat and cook the ground pork until browned and crispy.
- Add minced garlic, ginger, and red pepper flakes, cooking for another minute.
- Push the meat to the side and whisk in the reserved noodle water, soy sauce, peanut butter, lime juice, and honey until smooth.
- Bring the sauce to a brief boil, then reduce to a simmer.
- Stir in the noodles and coleslaw mix, mixing everything together.
- Garnish with chopped peanuts and green onions before serving.
