Vegetable Lo Mein

Ingredients

The vegetables

  • ½ cup onion, thinly sliced
  • ½ cup carrots, shredded or julienned
  • ¼ cup celery, thinly sliced
  • 1 cup green cabbage, shredded
  • ¾ cup shiitake mushrooms, thinly sliced
  • ½ cup red bell pepper, thinly sliced
  • 2 teaspoons minced garlic
  • ¼ cup green onions, sliced

The noodles

  • 10 ounces fresh noodles, cooked according to package instructions

The sauce

  • cup vegetable broth
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons corn starch

The cooking

  • 1 tablespoon vegetable oil
  • salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan over medium-high heat.
  2. Add the onions, carrots, celery, cabbage, mushrooms, and bell peppers to the pan and cook for about 4 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 30 seconds, seasoning with salt and pepper.
  4. Add the cooked noodles to the pan and toss to combine with the vegetables.
  5. In a separate bowl, whisk together the vegetable broth, hoisin sauce, soy sauce, sesame oil, and corn starch.
  6. Pour the sauce into the pan and bring to a simmer, cooking for about 1 minute until the sauce thickens.
  7. Garnish with green onions and serve immediately.
