Instructions
- Heat the vegetable oil in a large pan over medium-high heat.
- Add the onions, carrots, celery, cabbage, mushrooms, and bell peppers to the pan and cook for about 4 minutes until softened.
- Stir in the minced garlic and cook for an additional 30 seconds, seasoning with salt and pepper.
- Add the cooked noodles to the pan and toss to combine with the vegetables.
- In a separate bowl, whisk together the vegetable broth, hoisin sauce, soy sauce, sesame oil, and corn starch.
- Pour the sauce into the pan and bring to a simmer, cooking for about 1 minute until the sauce thickens.
- Garnish with green onions and serve immediately.
