Easy Lo Mein

thinly sliced

sliced mushrooms

garlic, roughly chopped

ginger, minced

red bell pepper
thinly sliced

matchstick carrots

shredded cabbage

snow peas or green beans
Garnish and optional additions

crispy tofu, chicken breast, shrimp, or thinly sliced beef
Instructions
- Boil water and cook the noodles according to package directions.
- Mix the sauce ingredients in a small bowl.
- Prepare all vegetables and have them ready near the stove.
- Heat oil in a wok or large skillet over medium-high heat, then sauté onions and mushrooms for 3-4 minutes.
- Reduce heat to medium, add garlic and ginger, and sauté for 2 minutes.
- Add bell pepper, carrots, cabbage, and snow peas, stirring until tender but crisp, about 3-4 minutes.
- Add the cooked noodles and toss to combine.
- Pour in the sauce and stir continuously for 2 minutes, adding a splash of water if it gets dry.
- Serve in bowls, garnished with green onions.
