Easy Lo Mein

Ingredients

The noodles

  • 4–5 ounces dry lo mein noodles

The sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons Chinese cooking wine
  • 2 teaspoons sesame oil
  • 1 teaspoon maple syrup, sugar or honey
  • teaspoon white pepper
  • ½–1 teaspoon sriracha or chili paste

The stir fry

  • 2 tablespoons wok oil, peanut oil or coconut oil
  • ½ onion thinly sliced
  • 2 cups sliced mushrooms
  • 4 cloves garlic, roughly chopped
  • 1 teaspoon ginger, minced
  • ½ red bell pepper thinly sliced
  • 1 cup matchstick carrots
  • 1 cup shredded cabbage
  • 1 cup snow peas or green beans

Garnish and optional additions

  • to taste scallions, sliced
  • to taste crispy tofu, chicken breast, shrimp, or thinly sliced beef

Instructions

  1. Boil water and cook the noodles according to package directions.
  2. Mix the sauce ingredients in a small bowl.
  3. Prepare all vegetables and have them ready near the stove.
  4. Heat oil in a wok or large skillet over medium-high heat, then sauté onions and mushrooms for 3-4 minutes.
  5. Reduce heat to medium, add garlic and ginger, and sauté for 2 minutes.
  6. Add bell pepper, carrots, cabbage, and snow peas, stirring until tender but crisp, about 3-4 minutes.
  7. Add the cooked noodles and toss to combine.
  8. Pour in the sauce and stir continuously for 2 minutes, adding a splash of water if it gets dry.
  9. Serve in bowls, garnished with green onions.
