Homemade Lo Mein

Ingredients

Noodles

  • 4-5 ounces dry lo mein noodles

Lo Mein Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons Chinese cooking wine
  • 2 teaspoons sesame oil
  • 1 teaspoon maple syrup
  • teaspoon white pepper
  • ½–1 teaspoon sriracha

Lo Mein Stir Fry

  • 2 tablespoons wok oil
  • ½ onion thinly sliced
  • 2 cups sliced mushrooms
  • 4 cloves garlic, roughly chopped
  • 1 teaspoon ginger, minced
  • ½ red bell pepper thinly sliced
  • 1 cup matchstick carrots
  • 1 cup shredded cabbage
  • 1 cup snow peas

Garnish

  • to taste scallions, sliced

Optional Additions

  • to taste Crispy Tofu
  • to taste chicken breast
  • to taste shrimp

Instructions

  1. Cook the noodles according to package directions.
  2. Whisk together the Lo Mein Sauce ingredients in a small bowl.
  3. Prep all the vegetables and set them near the stove.
  4. In a wok or large skillet, heat oil over medium-high heat and sauté onions and mushrooms for 3-4 minutes.
  5. Add garlic and ginger, then sauté for an additional 2 minutes.
  6. Add bell pepper, carrots, cabbage, and snow peas, stirring until tender but still crisp, about 3-4 minutes.
  7. Add the cooked noodles and stir to combine.
  8. Pour in the Lo Mein Sauce and toss continuously for 2 minutes, adding a splash of water if it gets too dry.
  9. Serve in bowls and garnish with sliced green onions.
