Homemade Lo Mein

Instructions
- Cook the noodles according to package directions.
- Whisk together the Lo Mein Sauce ingredients in a small bowl.
- Prep all the vegetables and set them near the stove.
- In a wok or large skillet, heat oil over medium-high heat and sauté onions and mushrooms for 3-4 minutes.
- Add garlic and ginger, then sauté for an additional 2 minutes.
- Add bell pepper, carrots, cabbage, and snow peas, stirring until tender but still crisp, about 3-4 minutes.
- Add the cooked noodles and stir to combine.
- Pour in the Lo Mein Sauce and toss continuously for 2 minutes, adding a splash of water if it gets too dry.
- Serve in bowls and garnish with sliced green onions.
