Ingredients

The beef

  • ¾ pound flank steak, thinly sliced
  • ½ teaspoon granulated sugar
  • ½ teaspoon sesame oil
  • 2 tablespoons soy sauce
  • 2 teaspoons cornstarch

The lo mein

  • 1 tablespoon vegetable oil
  • 10 ounces fresh egg noodles, pre-cooked
  • ½ cup thinly sliced yellow onion
  • ½ cup shredded or julienned carrots
  • ¼ cup thinly sliced celery
  • 1 cup shredded cabbage
  • 1 teaspoon minced garlic
  • ¼ cup beef broth
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch
  • ¼ cup sliced green onion tops
  • to taste salt
  • to taste pepper

Instructions

  1. Marinate the flank steak with sugar, sesame oil, soy sauce, and cornstarch for at least 10 minutes.
  2. Heat vegetable oil in a large pan over medium-high heat and cook the beef until golden brown, then remove it from the pan.
  3. Add onions, carrots, celery, and cabbage to the pan and cook until just softened.
  4. Add minced garlic and cook for 30 seconds.
  5. Add the pre-cooked noodles and the cooked beef to the pan and toss to combine.
  6. In a separate bowl, whisk together beef broth, hoisin sauce, soy sauce, sesame oil, and cornstarch.
  7. Pour the sauce into the pan and bring to a simmer until thickened, then sprinkle with green onions and serve.
