Beef Lo Mein

Ingredients

The noodles

  • 1 pound lo mein noodles

The beef

  • ½ pound flank steak, sliced into 1/4-inch strips
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil

The sauce

  • ¼ cup soy sauce
  • 1 tablespoon mirin
  • 3 teaspoons cornstarch
  • 1 teaspoon sesame oil (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper

The vegetables

  • 1 tablespoon vegetable oil
  • 1 cup carrots, julienned
  • 1 red bell pepper, julienned
  • 1 cup mushrooms, sliced
  • 2 cups napa cabbage, shredded
  • 3 tablespoons green onions, sliced

Instructions

  1. Cook the lo mein noodles according to package instructions and set aside.
  2. In a bowl, combine all beef ingredients except for the vegetable oil and set aside.
  3. In another bowl, mix all sauce ingredients and set aside.
  4. Heat vegetable oil for the beef in a large wok or skillet over high heat, add the beef, and cook until no longer pink.
  5. Transfer the beef to a plate and set aside.
  6. In the same skillet, heat vegetable oil for the vegetables, then add carrots, bell pepper, and mushrooms, cooking for 4 minutes.
  7. Add cabbage and green onions to the skillet and cook for an additional 2 minutes.
  8. Return the beef to the skillet, add the sauce and noodles, and toss everything together until the sauce thickens.
