Ingredients

The noodles

  • 6-7 oz lo mein noodles

The beef

  • 1 pound ground beef
  • ½ teaspoon smoked paprika
  • to taste salt
  • to taste pepper

The vegetables

  • 3 cups fresh or frozen mixed vegetables
  • 3 cloves garlic (minced)

The sauce

  • ¼ cup soy sauce or liquid aminos
  • ¼ cup brown sugar or sweetener
  • 1 teaspoon sesame oil
  • 2 tablespoons rice vinegar
  • ½ tablespoon cornstarch
  • ½ tablespoon water

Instructions

  1. Cook the noodles according to the package instructions, then drain and set aside.
  2. In a skillet over medium heat, cook the ground beef, breaking it into smaller pieces until fully cooked, about 4-5 minutes.
  3. Drain excess fat from the beef, season with smoked paprika, salt, and pepper, then remove and set aside.
  4. In the same pan, cook the vegetables and garlic for 3-4 minutes until soft, then remove and set aside.
  5. Add soy sauce, rice vinegar, sesame oil, and brown sugar to the pan, stirring until dissolved.
  6. Mix cornstarch and cold water in a bowl until smooth, then add to the sauce, stirring until thickened.
  7. Combine the cooked beef, vegetables, and noodles in the pan, stirring for 2-3 minutes until well mixed.
