Shrimp Lo Mein

Instructions
- Heat 2 teaspoons of vegetable oil in a large pan over medium-high heat.
- Add onions, carrots, celery, and cabbage to the pan and stir-fry until softened.
- Add minced garlic and cook for an additional 30 seconds.
- Remove the vegetables from the pan and cover to keep warm.
- Add the remaining oil to the pan and cook the shrimp until pink and opaque.
- Return the vegetables to the pan and add the pre-cooked noodles.
- In a separate bowl, whisk together chicken broth, hoisin sauce, soy sauce, sesame oil, and corn starch.
- Pour the sauce into the pan and bring to a simmer until thickened.
- Sprinkle with sliced green onions and serve immediately.
