Shrimp Lo Mein

Ingredients

  • 4 teaspoons vegetable oil
  • ½ cup yellow onion, thinly sliced
  • ½ cup carrots, shredded or julienned
  • ¼ cup celery, thinly sliced
  • 1 cup green cabbage, shredded
  • teaspoons minced garlic
  • ¾ pound medium or large shrimp, peeled and deveined
  • 10 ounces fresh egg noodles, pre-cooked
  • ¼ cup chicken broth
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons corn starch
  • ¼ cup green onions, sliced
  • to taste salt
  • to taste black pepper

Instructions

  1. Heat 2 teaspoons of vegetable oil in a large pan over medium-high heat.
  2. Add onions, carrots, celery, and cabbage to the pan and stir-fry until softened.
  3. Add minced garlic and cook for an additional 30 seconds.
  4. Remove the vegetables from the pan and cover to keep warm.
  5. Add the remaining oil to the pan and cook the shrimp until pink and opaque.
  6. Return the vegetables to the pan and add the pre-cooked noodles.
  7. In a separate bowl, whisk together chicken broth, hoisin sauce, soy sauce, sesame oil, and corn starch.
  8. Pour the sauce into the pan and bring to a simmer until thickened.
  9. Sprinkle with sliced green onions and serve immediately.
