Ingredients

The sauce

  • ¼ tsp ground ginger
  • 1 clove garlic
  • 2 tbsp maple syrup
  • cup peanut butter
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp sesame oil

The noodles and toppings

  • 8 oz brown rice noodles
  • 3 scallions diced
  • 2 medium carrots, sliced
  • 1 tbsp toasted sesame seeds
  • 1 tbsp sesame oil

Instructions

  1. 1. Combine the ginger, garlic, maple syrup, peanut butter, rice vinegar, soy sauce, olive oil, and sesame oil in a food processor and process until smooth.
  2. 2. Cook the noodles according to package directions in a large pot of water.
  3. 3. Before draining, reserve ½ cup of the cooking water, then drain the noodles and place them in a large bowl.
  4. 4. Add the remaining tablespoon of sesame oil to the noodles and stir.
  5. 5. Mix the peanut butter dressing with the reserved cooking water and pour it over the hot noodles, stirring to combine.
  6. 6. Let the noodles sit at room temperature for up to 60 minutes, stirring occasionally.
  7. 7. Before serving, stir in the scallions, carrots, and sesame seeds. Serve warm or at room temperature.
