Rice Noodles with Peanut Sauce

Instructions
- 1. Combine the ginger, garlic, maple syrup, peanut butter, rice vinegar, soy sauce, olive oil, and sesame oil in a food processor and process until smooth.
- 2. Cook the noodles according to package directions in a large pot of water.
- 3. Before draining, reserve ½ cup of the cooking water, then drain the noodles and place them in a large bowl.
- 4. Add the remaining tablespoon of sesame oil to the noodles and stir.
- 5. Mix the peanut butter dressing with the reserved cooking water and pour it over the hot noodles, stirring to combine.
- 6. Let the noodles sit at room temperature for up to 60 minutes, stirring occasionally.
- 7. Before serving, stir in the scallions, carrots, and sesame seeds. Serve warm or at room temperature.
