Ingredients

  • 3 tablespoons warm water
  • 1 tablespoon rice wine vinegar
  • ½ teaspoon sesame seeds
  • cup natural peanut butter (smooth)
  • ¼ teaspoon crushed red pepper flakes
  • Juice of ½ lime (optional)
  • sesame seeds and chopped peanuts (for garnish)

Instructions

  1. Whisk the peanut sauce ingredients together until smooth and well-combined.
  2. Cook the noodles in salted boiling water according to package directions, then drain and cool.
  3. In a large bowl, combine the noodles, sliced vegetables, and peanut sauce, tossing to combine.
  4. Taste and adjust flavors as needed, then garnish with sesame seeds and chopped peanuts before serving.
