Ingredients

The noodles and vegetables

  • 12 ounces linguine or other long pasta/noodle
  • cups thinly sliced bell peppers
  • cups sugar snap peas, trimmed
  • cup chopped roasted peanuts
  • ¼ cup chopped cilantro
  • ¼ cup sliced green onions

The sauce

  • ½ cup creamy peanut butter
  • 2 tablespoons soy sauce
  • tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon sesame oil
  • 2 teaspoons chili garlic sauce
  • ¼ cup warm water

Instructions

  1. Boil salted water and cook the linguine according to package directions, adding snap peas during the last 2 minutes.
  2. While cooking, mix the sauce ingredients until smooth, adding more water as needed.
  3. Drain the noodles and snap peas, then return them to the pot with the bell peppers.
  4. Pour the peanut sauce over the noodles and toss to coat.
  5. Serve topped with peanuts, cilantro, and green onions.
