Easy Vegan Thai Peanut Noodles

Ingredients

Peanut Sauce

  • ½ cup natural peanut butter
  • ½ cup water
  • 3 tablespoons soy sauce
  • 2 cloves garlic
  • 2 tablespoons fresh lime juice
  • 1 tablespoon agave or maple syrup
  • 1 inch fresh ginger
  • 2 teaspoons hot sauce (optional)
  • 1 teaspoon sesame oil

Noodles and Veggies

  • 6 oz vegan chow mein noodles or rice noodles
  • 1 medium red bell pepper
  • 1 medium carrot
  • 2 green onions chopped
  • ¼ cup peanuts
  • handful cilantro

Instructions

  1. Mix all peanut sauce ingredients in a small bowl and set aside.
  2. Cook the noodles according to package directions, then drain and return to the saucepan.
  3. Add the peanut sauce, bell pepper, and carrot to the noodles and toss well.
  4. Garnish with green onions, peanuts, and cilantro, and add more hot sauce if desired.
