Ingredients

The base

  • 3 pounds russet potatoes
  • 1 cup chicken broth
  • 1 cup milk
  • ¼ cup heavy whipping cream
  • 4 oz cream cheese
  • 2 cloves garlic
  • ½ teaspoon onion powder
  • to taste salt
  • to taste pepper

The cheese

  • 1 cup grated cheddar cheese
  • 1 cup grated Gruyere cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Combine milk, broth, heavy cream, softened cream cheese, garlic, onion powder, salt, and pepper to create a sauce.
  2. Add 1/3 of the sliced potatoes to the bottom of the slow cooker.
  3. Pour half of the sauce over the potatoes and layer in 1/3 of the grated cheese.
  4. Add another 1/3 of the potatoes, the remaining sauce, and 1/3 of the grated cheese.
  5. Add a final layer of potatoes and the remaining grated cheese.
  6. Cover and cook on High for 3-4 hours or Low for 4-6 hours.
  7. Once cooked, let the dish cool for 20-30 minutes before serving to thicken the sauce.
