Ingredients

The sauce

  • 4 tablespoons butter
  • 3 cloves garlic
  • ¼ cup flour
  • 3 cups heavy cream or whole milk
  • cups gruyere cheese
  • 4 ounces brie cheese
  • 2 tablespoons fresh sage
  • ¼ teaspoon cayenne pepper
  • to taste salt
  • to taste pepper

The potatoes

  • 4 pounds russet potatoes

The topping

  • cups Ritz crackers
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F.
  2. Cook butter and garlic in a saucepan until fragrant, then add flour and whisk.
  3. Slowly pour in cream and heat until warm, then stir in ¾ of the Gruyere cheese.
  4. Add brie, sage, cayenne, salt, and pepper, stirring until melted and smooth.
  5. Butter a 9x13 inch casserole dish and mix the cream sauce with potato slices.
  6. Spoon some cream sauce into the dish, layer the potatoes evenly, and pour remaining sauce on top.
  7. Top with remaining Gruyere cheese and cover with foil, baking for 1 hour.
  8. Mix crushed crackers with butter and sprinkle over the potatoes after 1 hour.
  9. Bake uncovered for an additional 30-35 minutes until crackers are golden.
