Cheesy Potato Au Gratin

Instructions
- Preheat the oven to 375°F.
- Cook butter and garlic in a saucepan until fragrant, then add flour and whisk.
- Slowly pour in cream and heat until warm, then stir in ¾ of the Gruyere cheese.
- Add brie, sage, cayenne, salt, and pepper, stirring until melted and smooth.
- Butter a 9x13 inch casserole dish and mix the cream sauce with potato slices.
- Spoon some cream sauce into the dish, layer the potatoes evenly, and pour remaining sauce on top.
- Top with remaining Gruyere cheese and cover with foil, baking for 1 hour.
- Mix crushed crackers with butter and sprinkle over the potatoes after 1 hour.
- Bake uncovered for an additional 30-35 minutes until crackers are golden.
